Caramel Mudslide Pie

Decadent ice cream pie drizzled with caramel and spiked with Irish crème and coffee liqueurs.
Ingredients:
  • 26 chocolate creme-filled sandwich cookies
  • 1/4 cup butter, melted
  • 6 cups coffee ice cream, slightly softened
  • 2 tablespoons Irish cream liqueur
  • 2 tablespoons coffee-flavored liqueur
  • 1/2 cup whipping cream, whipped
  • 1/4 cup caramel topping
Instructions:
  • In a food processor, pulse 20 sandwich cookies until fine crumbs form. Add melted butter and pulse until combined. Press mixture into the bottom and up the sides of a 9-inch glass pie plate. Freeze for 15 minutes.
  • Combine the ice cream and both liqueurs in a large bowl until mixed well. Transfer the mixture into the crust, cover with plastic wrap, and freeze for at least 6 hours or overnight.
  • Allow the pie to thaw for 5 to 10 minutes before serving. Crush the remaining 6 sandwich cookies. Cut the pie into 8 slices, garnish each slice with a dollop of whipped cream, drizzle with caramel topping, and sprinkle with crushed cookies.
