Ingredients:
  • 1 tin sweetened condensed milk (see note)
  • 1 packer Scotch Finger Biscuits
  • 375g dark chocolate
  • 50g butter
Instructions:
  • Place the unopened tin of condensed milk in a saucepan and fill it with water up to 1/2cm below the top of the tin. Boil for 3 hours, remembering to refill the water every 30 minutes or as needed. (see note)
  • Crush scotch finger biscuits in a plastic bag with a rolling pin, then mix crumbs with softened butter. Press mixture into the bottom of a square baking tin and chill in the fridge.
  • After boiling the condensed milk tin for 3 hours, place it under cold running water to cool down. It is crucial to let the tin cool completely before opening to avoid hot caramel spilling everywhere.
  • After chilling, open the can and spread the contents over the biscuit base. Return to the fridge to chill further.
  • Melt chocolate gently in a bain-marie, then pour over caramel and spread to edges with a spatula or knife.
  • Refrigerate for an additional 10 minutes or until the chocolate is firm. Cut into slices and enjoy!
