Banana caramel slice

Ingredients:
  • 2 (500g each) pkt banana & walnut bread slices
  • 45.00 gm brown sugar, firmly packed
  • 167.50 gm golden syrup
  • 395g can condensed milk
  • 4.40 gm vanilla extract
  • 180g butter
  • 100g dark chocolate, chopped
Instructions:
  • Prepare a 20 x 30cm slice pan by greasing it and lining the base and sides with baking paper. Neatly trim the banana bread slices and arrange them snugly in the pan.
  • In a heavy-based saucepan over low heat, melt the sugar, golden syrup, condensed milk, vanilla, and 150g of butter together. Stir constantly for about 3-4 minutes until the sugar dissolves. Increase the heat to medium-low and continue stirring for 15-20 minutes until the mixture thickens and becomes a golden caramel color.
  • Take the caramel off the heat and let it cool slightly for 3-4 minutes, stirring occasionally. Drizzle the caramel over the banana bread and spread it evenly with a spatula. Allow it to cool completely.
  • In a heatproof bowl, combine the chocolate and remaining butter. Microwave on High for 45 seconds to 1 minute until smooth. Spread the mixture evenly over the caramel. Chill in the fridge for 15-20 minutes to set. Cut into pieces before serving.
