Thermomix peanut caramel slice recipe

Easy Peanut Caramel Slice made with roasted unsalted peanuts using Thermomix. Packed with oats, nuts, and dates for a delicious and healthier homemade treat.
Ingredients:
  • 260g roasted unsalted peanuts (see Tips)
  • water, for soaking
  • 60 g extra virgin coconut oil, plus extra for greasing
  • 150g rolled oats
  • 50g pecans (see Tips)
  • 200.00g pitted Medjool dates
  • 20g desiccated coconut
  • 2.50 gm ground cinnamon
  • 13.60 gm pure maple syrup
  • 60g coconut cream
  • 30g virgin coconut oil
  • 4.40 gm natural vanilla extract
  • 100g banana
  • 150g dark chocolate, broken into pieces
  • 13.80 gm grapeseed oil
Instructions:
  • Weigh peanuts into a bowl placed on top of the mixing bowl lid. Cover the peanuts with water (about 1500 g) and allow them to soak for 2-3 hours, or until softened.
  • Preheat your oven to 160°C. Line a large baking tray (30 x 40 cm) with parchment paper and prepare a slice tin (16 x 26 cm) by greasing and lining it with parchment paper, making sure the edges hang over the sides.
  • Weigh oats and pecans into a bowl, then spread them on a baking tray. Bake at 160°C for 15 minutes until lightly toasted. Allow to cool.
  • Combine the cooled oats and pecans in a mixing bowl and pulse for 10 seconds at speed 6 until chopped.
  • Combine dates, coconut, cinnamon, oil, and syrup in the mixing bowl and blend for 10 seconds at speed 6. Press the mixture evenly and firmly into the prepared tin using the back of a spoon. Chill in the refrigerator without washing the mixing bowl.
  • Drain the peanuts thoroughly and chop them in a mixing bowl for 10 seconds on speed 6 until finely chopped.
  • Use a spatula to scrape down the sides of the mixing bowl and chop at speed 7 for 10 seconds.
  • Combine all remaining filling ingredients and mix for 10 seconds on speed 6.
  • Use a spatula to scrape down the sides of the mixing bowl, then blend for 15-20 seconds on speed 8 until the mixture is nearly smooth.
  • Spread the mixture evenly on the base using a spatula, then refrigerate while you make the topping. Wash and dry the mixing bowl.
  • Prepare the topping by placing chocolate in a mixing bowl and grating for 15 seconds at speed 8. Scrape down the sides of the bowl with a spatula. Add grapeseed oil and heat for 3 minutes at 60°C on speed 1, or until smooth. Take the slice out of the fridge and even out the top with the back of a spoon if necessary. Spread the melted chocolate over the slice and smooth it with a spatula. Chill in the refrigerator until firm (around 2 hours or overnight). Slice and serve.
