Indulge in a quick, guilt-free sweet treat with this easy, nutty dessert made in just 15 minutes using a Thermomix.
Ingredients:
  • 250 g banana, cut into pieces and frozen
  • 100 g smooth peanut butter
  • 100 g coconut milk
  • Coconut nectar, to serve
  • Cacao nibs, to serve
  • Coconut flakes, toasted, to serve
Instructions:
  • Add the frozen banana to the mixing bowl and blend on high speed for 10 seconds.
  • Combine the peanut butter and coconut milk in a blender and blend on high speed for 40 seconds until nearly smooth.
  • Use a spatula to scrape down the sides of the mixing bowl, then blend on high speed for 20 seconds until the mixture is smooth.
  • Transfer the soft ice cream into a freezable container and freeze until firm. Serve by drizzling with coconut nectar, and sprinkling with cacao nibs and toasted coconut flakes if desired.
