Simplified and versatile curry recipe for all ages, with optional heat from chilli powder. Perfect for stress-free family dinners.
Ingredients:
  • 18.40 gm oil
  • 20.00 gm butter
  • 20.00 ml coriander seed
  • 3 tsp cumin seeds
  • 1 small brown onion, quartered
  • 4cm piece ginger, chopped
  • 3 garlic cloves
  • 400g can tomato polpa
  • 125g (1/2 cup) thickened cream
  • 600g chicken breast fillet, cut into 4cm pieces
  • 1/2 cinnamon stick
  • 5 whole cloves
  • 5 cardamom pods, bruised
  • 2.50 gm smoked paprika
  • 3 dried bay leaves
  • Steamed rice, to serve
Instructions:
  • 1. Add coriander seeds and cumin seeds to the Thermomix mixing bowl with the measuring cup removed. Roast at 120°C for 3 minutes. Replace the measuring cup and grind for 1 minute at speed 9.
  • Combine onion, ginger, and garlic and pulse for 5 seconds on speed 7. Scrape down the sides of the bowl using a spatula. Incorporate oil and butter, then sauté for 5 minutes at 120°C on speed 1. Introduce tomato and cream, then blend for 5 seconds on speed 8.
  • Combine the chicken with cinnamon, cloves, cardamom, paprika, and bay leaves. Season generously with pepper and stir with a spatula. Cook at 100 degrees for 8 minutes at speed 1. Let it rest for 5 minutes before serving.
  • Garnish the butter chicken with fresh cilantro leaves. Enjoy with fluffy steamed rice.
