Wholesome almond-kefir pancakes made effortlessly in a Thermomix with coconut oil and wholemeal flour. Satisfy your cravings guilt-free!
Ingredients:
  • 60 g almonds (see Tips)
  • 100 g banana
  • 150 g wholemeal self-raising flour (see Tips)
  • 1.25 gm ground cinnamon
  • 8.00 gm baking powder
  • 4 eggs
  • 150 g kefir milk (see Tips)
  • 12.60 gm virgin coconut oil, plus extra if needed (see Tips)
  • ricotta, to serve
  • mixed berries, to serve
  • pure maple syrup, to serve
Instructions:
  • Add the almonds to the mixing bowl and blitz on high speed for 10 seconds until finely ground.
  • In a mixing bowl, combine banana, flour, cinnamon, baking powder, eggs, kefir milk, and 2 teaspoons of oil. Mix on high speed for 10 seconds until smooth and well combined.
  • Heat a non-stick frying pan over medium-high heat and add the remaining 1 teaspoon oil. Pour ¼ cup of batter into the pan and spread out evenly (about 12 cm diameter). Cook for 1-2 minutes until bubbles form on the surface and the base is golden. Flip the pancake and cook for another 1-2 minutes until golden and cooked through. Transfer to a plate, cover to keep warm, and repeat the process with the remaining batter, adding more oil if necessary (makes approximately 14 pancakes).
  • Top pancakes with creamy ricotta, a medley of vibrant berries, and a drizzle of sweet syrup for a decadent finish.
