Thermomix apple ginger cake with salted caramel sauce recipe

Spicy apple ginger cake made with Thermomix, topped with salted caramel sauce for a sweet and indulgent treat.
Ingredients:
  • 500 g red apples (approx. 4 apples), peeled, cored and cut into pieces (2 cm)
  • 180 g extra virgin olive oil, plus extra for greasing (see notes)
  • 400 g spelt flour, plus extra for dusting
  • 3 cm piece fresh ginger, peeled
  • 3 eggs
  • 150 g coconut sugar (see notes)
  • 4.40 gm natural vanilla extract
  • 5.00 gm bicarbonate of soda
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 5.00 gm ground cinnamon
  • 2 tsp ground cloves
  • 120 g salted butter
  • 150 g double cream (see notes)
  • 100 g coconut sugar (see notes)
  • ¼-½ tsp salt
Instructions:
  • Add the apples to the mixing bowl and blend for 20 seconds on high speed until smooth. Place the purée in a separate bowl and clean and dry the mixing bowl.
  • Preheat your oven to 160°C. Prepare your bundt tin by greasing it lightly and dusting it with flour.
  • Add ginger to the mixing bowl and blend on high speed for 5 seconds until finely chopped. Use a spatula to scrape down the sides of the bowl.
  • Attach the butterfly whisk to the mixer. Pour in the eggs and sugar. Whisk on medium speed for 5 minutes until light and fluffy.
  • Drizzle in oil and vanilla along with the reserved apple purée, then blend for 5 seconds on speed 3. Discard the butterfly whisk.
  • Combine flour, bicarbonate of soda, salt, pepper, cinnamon, and ground cloves in the mixing bowl, then mix on medium speed for 10 seconds until well combined.
  • Use a spatula to scrape down the sides of the mixing bowl. Mix at speed 3 for 5 seconds, using the spatula to assist, until well combined. Pour the mixture into the prepared tin and bake at 160°C for 50 minutes or until a wooden skewer inserted into the center comes out clean.
  • Let the dish rest in the tin for 15 minutes, then flip it onto a wire rack to cool. Clean and dry the mixing bowl.
  • For the salted caramel sauce, combine butter, cream, sugar, and salt in a mixing bowl. Cook for 5-6 minutes at 120°C on speed 2 with the simmering basket on the mixing bowl lid. Drizzle the salted caramel sauce over the cake before serving.
