Thermomix pumpkin soup recipe

Deliciously creamy Australian pumpkin soup with Queensland blue pumpkin and granny Smith apple, easily made in a thermomix. Customize with your favorite herbs and spices for a unique twist.
Ingredients:
  • 1 brown onion, halved
  • 40g butter
  • 1.2kg Queensland blue pumpkin, peeled, deseeded, cut into pieces
  • 1 Granny Smith apple, peeled, core removed, coarsely chopped
  • 375g (1 1/2 cups) chicken or vegetable stock
  • 250g (1 cup) milk
  • 2 tsp fresh thyme leaves, plus extra sprigs to serve
  • Thickened cream, to serve
Instructions:
  • Add the onion to the Thermomix mixing bowl and pulse for 5 seconds at speed 5. Remember to scrape down the sides using the spatula.
  • Cook the butter over medium heat for 3 minutes until melted.
  • Add the pumpkin and apple to the mixing bowl and finely chop for 15 seconds at speed 7. Remember to use the spatula to scrape down the sides of the bowl.
  • Combine the stock, milk, and thyme and simmer for 20 minutes at 100°C on speed 1.
  • Garnish the pumpkin soup with a swirl of cream and a sprinkle of fresh thyme leaves, if desired.
