Thermomix cheese and bacon cob loaf dip recipe

Create a delectable cheese and bacon dip with a twist using your Thermomix!
Ingredients:
  • 1 cob loaf (20 cm)
  • 200g vintage cheddar, cut into 3cm cubes
  • 1 spring onion, trimmed and cut into halves
  • 200g rindless bacon rashers, trimmed and cut into pieces
  • 20g olive oil
  • 250g cream cheese, softened and cut into pieces
  • 250g sour cream
Instructions:
  • Preheat your oven to 180C while you prepare a baking tray lined with parchment paper.
  • Remove the top of the cob loaf to create a lid, carefully hollow out the center leaving a 1 1/2 cm thick edge. Tear the remaining bread into bite-sized pieces and keep aside.
  • Add the cheddar cheese and spring onion/shallot into a mixing bowl, then finely chop for 10 seconds on high speed. Transfer the mixture into a separate bowl and set it aside.
  • In a mixing bowl, combine bacon and olive oil. Pulse for 5 seconds on speed 7. Scrape down the sides of the bowl with a spatula, then cook for 5 minutes at 90°C on speed 1.
  • Combine cream cheese, sour cream, and reserved grated cheese mixture in the bowl and mix on medium speed for 15 seconds until well blended.
  • Spoon the dip into the hollowed cob loaf and place the lid on top. Wrap the cob loaf in aluminum foil, then place it on a baking tray and bake for 45 minutes.
  • Arrange the bread pieces around the cob loaf on a baking tray and bake for an additional 15 minutes. Serve hot.
