Let Thermomix do the work for a moist, lightly spiced cake. Topped with cream cheese icing, walnuts add a delightful crunch. Delicious and effortless!
Ingredients:
  • 300g carrots, peeled, each cut into 4 pieces
  • 125g (1/2 cup) light-flavoured olive oil
  • 3 eggs
  • 220g (1 1/3 cups, lightly packed) brown sugar
  • 300g (2 cups) self-raising flour
  • 0.63 gm bicarbonate of soda
  • 2.50 gm ground cinnamon
  • 1.25 gm ground ginger
  • Pinch nutmeg
  • 100g pkt walnut halves
  • 432g can crushed pineapple
  • 250g pkt cream cheese, at room temperature
  • 200g unsalted butter, at room temperature
  • 300g (2 cups) icing sugar mixture
  • 4.40 gm vanilla extract
Instructions:
  • Preheat the oven to 180C/160C fan and prepare two 22cm round cake pans by lining them with baking paper.
  • Grate the carrot in the Thermomix mixing bowl for 5 seconds on speed 6.
  • Combine the oil, eggs, sugar, flour, bicarbonate of soda, cinnamon, ginger, nutmeg, and a generous pinch of salt in a bowl. Mix on medium speed for 10 seconds until well blended.
  • Set aside 8 walnuts. Combine the rest of the walnuts and the undrained pineapple in a bowl and mix on medium speed for 10 seconds.
  • Pour the mixture evenly into the pans. Bake for 40-45 minutes or until firm. Let it cool for 10 minutes, then carefully transfer to wire racks to cool completely.
  • In the Thermomix mixing bowl, combine cream cheese, butter, icing sugar, and vanilla. Process on speed 5 for 20 seconds.
  • Assemble the cake by spreading half of the icing on top of the first layer, then place the second layer on top and spread the remaining icing. Finish by sprinkling the reserved walnuts on top before slicing and serving.
