Thermomix sparkling white sangria punch recipe

Whip up a refreshing summer punch with ripe stone fruit for your next party!
Ingredients:
  • 150 g caster sugar
  • 1.25 gm ground cinnamon
  • 40 g brandy
  • 50 g water
  • 120 g orange juice (approx. 2 oranges)
  • 80 g lemon juice (approx. 2 lemons)
  • 1 yellow peach, stone removed and cut into eighths
  • 1 white peach, stone removed and cut into eighths
  • 1 nectarine, stone removed and cut into eighths
  • 1 Pink Lady apple, core removed and cut into thin slices
  • 500 g lemonade or soda water, chilled
  • 750 g sparkling wine, chilled
  • 300 g ice cubes
  • 4 sprigs fresh mint, leaves only, for garnishing
Instructions:
  • Combine sugar, ground cinnamon, brandy, water, orange juice, and lemon juice in a mixing bowl. Cook at 90°C for 5 minutes on speed 1.
  • Combine the stone fruit, cinnamon quill, and apple in a sealable container. Pour the brandy mixture from the mixing bowl over the top. Let it cool to room temperature for about 20 minutes, then refrigerate overnight to chill.
  • In a large jug set on top of the mixing bowl lid, measure out the lemonade or soda water and sparkling wine. Pour the mixture into a punch bowl along with the reserved chilled fruit-brandy mix.
  • Place ice cubes in the punch bowl, gracefully scatter mint leaves on top, and present for immediate enjoyment.
