Irresistible banoffee slice combining luscious banana and gooey caramel. Perfect for wowing guests.
Ingredients:
  • 200g butter, softened
  • 70.95 gm caster sugar
  • 4.40 gm vanilla extract
  • 1 extra large egg
  • 187.50 ml plain flour
  • 5.00 gm self-raising flour
  • 32.50 gm cocoa powder
  • 64.38 gm milk
  • 395g canned sweetened condensed milk
  • 90g butter, chopped, softened
  • 90.00 gm light brown sugar, firmly packed
  • 53.60 gm golden syrup
  • 2 medium bananas, thinly sliced
  • 300ml Whipping Cream
  • 60g milk chocolate, grated
Instructions:
  • Preheat your oven to 180C (160C fan forced). Grease a 16cm x 26cm slice pan and line the base and sides with baking paper, leaving some overhang for easy removal later.
  • In a medium bowl, cream together butter, sugar, and vanilla using an electric mixer on medium speed for 3-5 minutes until light and fluffy. Add egg and beat for an additional minute. Gently mix in both flours, cocoa, and milk until combined.
  • Pour batter into pan, making sure it spreads evenly. Bake for 15-20 minutes or until a skewer inserted in the center comes out clean. Let it cool.
  • In a medium saucepan, mix condensed milk, butter, and brown sugar. Cook over medium heat, stirring constantly for 10-12 minutes until a rich caramel color forms. Remove from heat and let cool for 10 minutes. Spread the filling over the base and refrigerate for 1 hour until firm.
  • Create a bed of banana slices on top of the caramel, add a generous dollop of whipped cream, and sprinkle with grated chocolate. Serve promptly.
