Irresistible banoffee pie slice for all to indulge in.
Ingredients:
  • 332.50 ml plain flour
  • 49.50 gm icing sugar mixture
  • 125g butter, chilled, chopped
  • 1 egg
  • 10.00 gm iced water
  • 3 bananas, cut into 1cm-thick slices
  • 300ml tub thickened cream, whipped
  • 40g 70% cocoa dark chocolate, grated
  • 395g can sweetened condensed milk
  • 50g butter
  • 110.55 gm golden syrup
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, leaving a 5cm overhang.
  • Combine flour, icing sugar, and butter in a food processor until fine crumbs form. With the motor running, add the egg and water, and process until the pastry comes together. Transfer the mixture into the prepared pan and press the pastry over the base using floured hands. Bake for 18 minutes or until golden, then cool the pan on a wire rack.
  • For the Caramel filling, combine condensed milk, butter, and golden syrup in a small saucepan over medium heat. Stir until smooth, about 2 to 3 minutes. Pour the mixture over the base in the pan. Bake until golden, about 15 minutes. Let it cool for 15 minutes, then refrigerate for 1 hour until cold.
  • Place the banana slices in a single layer over the caramel. Spread the cream on top to cover the bananas. Sprinkle with chocolate and then refrigerate for 1 hour. Cut into 24 pieces and serve.
