Quick banoffee pie jars with luscious caramel, ripe bananas, and creamy filling - perfect for effortless entertaining.
Ingredients:
  • 250g plain digestive biscuits
  • 80g unsalted butter, melted
  • 80ml (1/3 cup) store-bought caramel sauce
  • 300g ctn double cream
  • 250ml (1 cup) thickened cream
  • 2 bananas
  • Caster sugar, to sprinkle
  • Chocolate sauce, to drizzle
Instructions:
  • Pulse biscuits in a food processor until finely crushed. Add butter and pulse until mixed. Spoon half of the biscuit mixture into four 250ml (1 cup) jars. Drizzle each with 1 tablespoon of caramel sauce.
  • Beat the creams together with electric beaters until firm peaks form.
  • Layer thinly sliced banana against the sides of the jars, followed by half of the cream and the remaining biscuit mixture. Finish by lightly drizzling with the remaining caramel sauce.
  • Slice the remaining banana thickly and arrange on a baking tray lined with parchment paper. Sprinkle with caster sugar and caramelize lightly using a kitchen blowtorch. Finish by topping the jars with the remaining cream, drizzling with chocolate sauce, and garnishing with the caramelized banana.
