Indulgent bars with gooey marshmallows, caramel popcorn, and peanuts for the ultimate sweet and crunchy treat.
Ingredients:
  • 1 roll (16.5 oz) refrigerated peanut butter cookies
  • 3 1/2 cups miniature marshmallows
  • 1 bag (3 oz) butter-flavored microwave popcorn, popped (8 cups)
  • 1 cup lightly salted dry-roasted peanuts
  • 1 bag (10 oz) peanut butter chips (1 2/3 cups)
  • 2/3 cup light corn syrup
  • 1/4 cup butter or margarine
  • 1 cup semisweet chocolate chips (6 oz)
Instructions:
  • Preheat oven to 350°F. Grease a 13x9-inch pan. Use floured fingers to evenly press dough into the bottom of the pan to create a crust. (Avoid consuming raw cookie dough post pressing into pan with floured fingers.)
  • Bake for 14 to 16 minutes until light golden brown. Sprinkle marshmallows over the crust and bake for an additional 3 minutes until marshmallows are puffed but not browned.
  • Combine popcorn and peanuts in a large bowl, then set aside. In a medium microwavable bowl, heat peanut butter chips, corn syrup, and butter on High for 1 to 2 minutes, stirring every 30 seconds until melted and smooth. Pour the mixture over the popcorn, stirring until fully coated. Press the mixture evenly over the marshmallows using the back of a spoon.
  • Place the chocolate chips in a small microwavable bowl and microwave on High for 1 to 1 minute 30 seconds, remembering to stir every 30 seconds until the chips are softened and smooth. Drizzle the melted chocolate over the bars. Allow them to cool on a cooling rack for 1 hour, then refrigerate for 30 minutes until set. Finally, cut into 6 rows by 4 rows.
