Create irresistible peanut caramel popcorn reminiscent of Cracker Jack® with this homemade recipe.
Ingredients:
  • 11 cups popped popcorn
  • 1 cup Spanish peanuts
  • 1.25 cups dark brown sugar
  • 10 tablespoons unsalted butter, cut into pieces
  • 0.25 cup dark corn syrup
Instructions:
  • Preheat the oven to 250°F (120°C) to get it nice and warm for your cooking adventure.
  • Evenly layer the popcorn on the bottom of a spacious roasting pan, then generously scatter peanuts over the top.
  • In a saucepan over medium-high heat, melt together brown sugar, butter, corn syrup, and salt. Cook, continuously whisking, until the mixture thickens and caramelizes, about 2 to 3 minutes.
  • Drizzle the caramel sauce over the popcorn and peanuts, gently mixing until everything is well coated, ensuring to pick up any fallen peanuts and caramel from the bottom of the roasting pan.
  • Bake in the preheated oven, stirring occasionally, until the caramel and popcorn are crispy, about 45 minutes. Spread the popcorn in a single layer on a sheet of parchment paper to cool completely.
