Indulgent ice cream pie with chocolate cookie crust, mint-chip filling, and decadent creme de menthe meringue topping.
Ingredients:
  • 1.5 cups crushed chocolate sandwich cookies
  • 0.25 cup butter, melted
  • 1 quart mint chocolate chip ice cream
  • 4 tablespoons creme de menthe liqueur
  • 1 cup crushed chocolate sandwich cookies
  • 3 egg whites
  • 0.25 teaspoon cream of tartar
  • 2 teaspoons creme de menthe liqueur
  • 0.33333334326744 cup white sugar
Instructions:
  • Mix 1 1/2 cups cookie crumbs with melted butter or margarine, then press firmly into a 9-inch pie pan, covering the bottom and sides. Freeze.
  • Layer the softened ice cream into the crust, then drizzle with 2 tablespoons of creme de menthe and sprinkle 1/2 cup of cookie crumbs on top. Repeat the layers. Freeze until firm.
  • Beat egg whites in a clean bowl until foamy. Add salt and cream of tartar, beat until slightly stiff. Gradually beat in sugar until peaks form. Fold in 2 teaspoons creme de menthe. Spread meringue over pie, seal to edges. Freeze for up to 24 hours.
  • Broil until the top is beautifully golden right before serving.
