Choc-mint whoopies

Make rich chocolate-mint ganache for irresistible whoopie pies.
Ingredients:
  • 125g butter, at room temperature
  • 160g (1 cup, lightly packed) brown sugar
  • 4.40 gm vanilla extract
  • 1 egg
  • 50g (1/2 cup) cocoa powder, sifted
  • 2.50 gm bicarbonate of soda
  • 300g (2 cups) plain flour
  • 330ml (1 1/3 cups) buttermilk
  • 2 x 100g pkts Mint Intense
  • 160ml (2/3 cup) thickened cream
  • 100g butter, chopped
  • 200g dark chocolate
  • Nestle Peppermint Crisp, chopped
Instructions:
  • - Preheat the oven to 190C and line 2 baking trays with non-stick baking paper. - In a bowl, use an electric beater to whip together the butter, sugar, and vanilla until light and creamy. - Mix in the egg until well combined.
  • Combine the cocoa and bicarbonate of soda, then gently fold in the flour and buttermilk in alternating batches using a metal spoon, until the mixture is just smooth and slightly stiff.
  • With a 3cm-diameter ice-cream scoop, place mixture rounds on prepared trays, leaving 5cm between each for spreading. Smooth mixture around the edges using your finger.
  • Bake for 10 minutes or until firm, swapping trays halfway through cooking. Allow to cool briefly, then transfer to wire rack to cool completely. Repeat process with remaining mixture in 2 more batches.
  • Create the filling by melting chocolate and cream in the microwave, ensuring it’s smooth. Mix in butter until smooth, then chill in the fridge until thick. Beat with an electric beater until pale and creamy.
  • Fill a piping bag with a 1cm fluted nozzle with the filling. Swirl the filling over the whoopie base, starting from the edge. Fill half of the whoopies with choc-mint ganache using the piping bag.
  • Sandwich together the remaining whoopies gently, then drizzle with melted dark chocolate and sprinkle chopped Nestle Peppermint Crisp on top.
