Decadent layered chocolate and vanilla ice cream dessert with biscuit chunks, fresh raspberries, mint leaves, and a dusting of icing sugar.
Ingredients:
  • 750ml vanilla ice-cream
  • 200g pkt Chocolate Mint Supremes, chopped
  • 750ml chocolate ice-cream
  • 250.00 ml frozen raspberries
  • 250.00 ml fresh raspberries or frozen raspberries
  • A few mint leaves
  • Icing sugar sprinkle
Instructions:
  • Prepare your 6-cup loaf tin by lining it with plastic wrap and non-stick baking paper. Let the vanilla ice cream soften slightly in a large bowl. Then, using a large metal spoon, gently fold in the biscuits.
  • Fill the loaf tin with the mixture and use the back of a spoon to create a smooth surface. Cover with plastic wrap and freeze for 2 hours until firm. Add the chocolate ice cream with frozen raspberries mixed in on top of the frozen loaf. Place it back in the freezer for at least 2 hours or overnight.
  • Chill a serving platter in the freezer for up to 1 hour before serving. Turn the loaf out onto the platter, remove the plastic and paper, then return to the freezer until serving.
  • Top your delectable dessert with vibrant fresh or frozen raspberries and fragrant mint leaves, sprinkle with a dusting of icing sugar, and elegantly slice before serving.
