Chocolate Mint Cheese Pie

Cream cheese filling over graham cracker crust, topped with chopped frozen chocolate mint candies, baked and chilled overnight for a decadent dessert.
Ingredients:
  • 1 (6 ounce) package chocolate covered creamy mints
  • 4 (8 ounce) packages cream cheese, softened
  • 0.75 cup white sugar
  • 3 eggs
  • 1 (9 inch) prepared graham cracker crust
Instructions:
  • Preheat oven to 350°F (175°C) to ensure perfect baking temperature.
  • Using an electric mixer, blend together the cream cheese and sugar until smooth. Gradually add the eggs one at a time, ensuring each is well incorporated. Mix in the vanilla, then pour the filling into the crust.
  • Take the frozen Junior Mints and finely chop them before generously sprinkling over the top of the filling. Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes, or until the filling is just set. Allow it to cool on a wire rack, then refrigerate for several hours or overnight. This recipe serves approximately 8 people.
