Loaded choc-mallow brownie recipe

Quick and decadent brownie featuring chocolate, marshmallows, and chocolate biscuits. Prep in just 20 minutes!
Ingredients:
  • 150g butter, chopped
  • 180g dark chocolate, chopped
  • 161.25 gm caster sugar
  • 84.98 gm milk
  • 8.80 gm vanilla extract
  • 250.00 ml plain flour
  • 49.50 gm self-raising flour
  • 32.50 gm cocoa powder
  • 200g packet chocolate royals biscuits, halved
  • 250.00 ml vanilla marshmallows, halved
  • 180g milk chocolate, chopped
  • 83.33 gm thickened cream
  • Chocolate royals biscuits, roughly chopped to decorate
Instructions:
  • Preheat the oven to 170C/150C fan-forced, then grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, allowing 2cm of paper to extend above the edges of the pan. In a saucepan over medium heat, combine butter, chocolate, sugar, milk, and vanilla. Stir and cook for 5 minutes until melted and smooth. Let the mixture cool for 10 minutes before using.
  • Incorporate eggs into the chocolate mixture until velvety. Add flours and cocoa, stirring with a whisk. Gently mix in biscuits. Transfer the mixture into the prepared pan using a spoon.
  • After baking for 35 minutes, generously top with marshmallows. Return to the oven for 5 to 10 minutes or until the top is gently firm to the touch and the marshmallows have softened. Let it cool in the pan before serving.
  • In a microwave-safe bowl, combine milk chocolate and cream. Microwave on HIGH for 1 minute or until smooth. Let it cool for 15 minutes. Drizzle over brownie, decorate with extra biscuits, cut into pieces, and serve.
