Ingredients:
  • 5 slices bacon, cut into 1/2-inch pieces
  • 2 cloves garlic, finely chopped
  • 2 cups shredded cooked chicken
  • 1 jar (15 oz) Alfredo pasta sauce
  • 1 package (16 oz) packaged gnocchi (not refrigerated or frozen)
  • 1/4 teaspoon crushed red pepper flakes
  • 3 cups packed fresh baby spinach leaves (from 6-oz bag)
  • 1/4 cup shredded Parmesan cheese
Instructions:
  • Cook the bacon in a Dutch oven or saucepan until crispy over medium-high heat. Transfer the bacon to a paper towel-lined plate using a slotted spoon and set aside. Keep 1 tablespoon of bacon drippings in the pan.
  • In bacon drippings, sauté garlic for 1 minute over medium heat, stirring constantly. Mix in milk, chicken, Alfredo sauce, gnocchi, and red pepper flakes. Bring to a boil, stirring often; then simmer uncovered for 3 to 5 minutes, stirring constantly until gnocchi is tender.
  • Combine the vibrant spinach and savory bacon in the pan until the spinach gently wilts, for about 1 minute. Top it off with a generous sprinkle of Parmesan cheese.
