Indulgent chicken lasagne with a veggie twist and creamy carbonara sauce.
Ingredients:
  • Olive oil, to grease
  • 450g shredded cooked chicken
  • 425g chilled carbonara pasta sauce
  • 250g frozen chopped spinach, thawed, excess moisture removed
  • 150g (1 cup) coarsely chopped roasted red pepper or chargrilled capsicum
  • 60ml (1/4 cup) fresh lemon juice
  • 1/2 tsp cracked black pepper
  • 1 x 375g pkt fresh lasagne sheets
  • 100g (1 cup) Pizza Plus shredded cheese
  • Baby spinach leaves, to serve
Instructions:
  • Preheat the oven to 170°C and generously grease the base of a 2.5-3L (10-12 cup) ovenproof dish with oil.
  • In a large bowl, mix together the chicken, sauce, spinach, red pepper, lemon juice, and black pepper.
  • Layer one-third of the lasagne sheets on the dish, followed by half of the chicken mixture. Repeat layering with remaining lasagne sheets and chicken mixture, ending with lasagne sheets. Cover with foil and bake in the oven for 45 minutes.
  • Unveil the dish and generously layer on the cheese. Bake until beautifully golden for about 10 minutes. Enjoy alongside fresh baby spinach.
