Indulgent chicken carbonara with crispy pancetta, fresh herbs, and creamy sauce - perfect for any night.
Ingredients:
  • 1 (16 ounce) package spaghetti
  • 2 teaspoons olive oil
  • 1 (4 ounce) package pancetta bacon, diced
  • 2 cloves garlic, minced
  • 2.5 cups whipping cream
  • 1 cup freshly grated Parmesan cheese
  • 8 large egg yolks
  • 0.25 cup chopped fresh basil
  • 0.25 cup chopped fresh Italian parsley
  • 4 cups shredded cooked chicken
  • salt and freshly ground black pepper to taste
Instructions:
  • 1. Boil a pot of well-salted water. Add spaghetti and cook until al dente, about 12 minutes. Drain well.
  • Heat olive oil in a large, heavy frying pan over medium heat. Saute pancetta and garlic until brown and crisp, about 8 minutes. Remove from heat and let cool slightly.
  • Combine cream, Parmesan, egg yolks, basil, and parsley in a large bowl and whisk until fully mixed and smooth.
  • Mix the chicken into the pancetta mixture until well combined. Pour in the cooked spaghetti and cream mixture. Toss everything together over medium-low heat until the chicken is heated through and a thick sauce coats the spaghetti, approximately 4 minutes. Be sure not to boil the sauce to avoid scrambling the eggs. Season with salt and pepper, then transfer the dish to a large, wide serving bowl.
