Indulgent chicken carbonara with velvety, creamy sauce made without cream - just eggs, Parmesan, and pasta water.
Ingredients:
  • 1 tablespoon plus 1 teaspoon salt, divided
  • 2 large eggs, at room temperature
  • 1/2 cup freshly grated Parmesan or Pecorino cheese, plus more for serving
  • 1 1/2 teaspoons freshly ground black pepper, divided
  • 2 tablespoons olive oil
  • 5 ounces (150g) cubed bacon, guanciale, or pancetta
  • 2 cloves garlic, thinly sliced
  • 1 boneless, skinless chicken breast (about 1 pound), trimmed of excess fat and cut into 1/2-inch pieces
  • 1/2 pound dry spaghetti
Instructions:
  • Bring salted water to a boil in a large pot (about 3 quarts) over high heat. Proceed with remaining steps as the water heats up.
  • Whisk eggs, Parmesan, and 1 teaspoon black pepper in a small bowl until combined. Set aside.
  • In a large frying pan over medium heat, crisp up the bacon in 1 tablespoon of olive oil for about 8 minutes. Stir in and sauté the garlic for 2 more minutes. Transfer bacon and garlic to a bowl, keeping 2 tablespoons of bacon grease in the pan. If needed, add 1 tablespoon olive oil. Move the cooked chicken to the pan, season with 1 teaspoon salt and 1/2 teaspoon black pepper, and cook until golden and done, about 6 to 8 minutes. Add chicken to the bowl with the bacon and garlic. You'll use the same pan to toss the carbonara, so keep it off the heat and unwashed.
  • Cook the spaghetti until al dente by adding it to boiling water. Reserve 1 cup of cooking water before draining the spaghetti in a colander.
  • Transfer the hot drained spaghetti to the frying pan. Whisk 2 tablespoons of hot cooking water into the egg mixture, then pour it over the pasta. Toss using tongs to coat the spaghetti. Add more hot cooking water as needed until a glossy, creamy sauce coats the spaghetti, possibly using the entire cup.
  • Combine chicken and bacon, then gently toss. Serve warm, optionally garnished with freshly grated Parmesan. If you enjoyed this dish, please consider rating it below!
