Whip up delicious gnocchi with just mashed potato, flour, and an egg - simple and satisfying!
Ingredients:
  • 2 potatoes, peeled
  • 2 cups all-purpose flour
  • 1 egg
Instructions:
  • In a large saucepan, generously cover potatoes with salted water. Boil until tender yet firm, approximately 25 to 30 minutes. Drain and let potatoes dry and cool in the pot for 5 to 10 minutes.
  • Once the potatoes have cooled slightly, easily peel off the skins by rubbing them with your hands. Use a potato ricer to process the peeled potatoes into a large bowl. Alternatively, mash them until very smooth. Allow the mixture to cool slightly for about 10 minutes.
  • Incorporate flour, egg, and salt until dough starts to come together. Transfer to a lightly floured surface and gently knead briefly for a mostly smooth texture (avoid overworking).
  • Divide the dough into 4 equal portions, then roll and shape each portion into long "snakes" that are about ¾-inch in diameter.
  • Cut the dough into 1/2-inch long pieces. (Optional: Create ridges by rolling each piece against a fork or gnocchi board.) Place the shaped gnocchi in a single layer on a baking sheet lined with parchment paper and dusted with flour.
  • Boil a large pot of lightly salted water. Cook gnocchi in batches for 3 to 4 minutes until they float to the top. Transfer to desired sauce using a spider or slotted spoon.
