Fluffy gnocchi in creamy Gorgonzola radicchio sauce, impressively easy dinner.
Ingredients:
  • 1 pound gnocchi
  • 2 cups chopped radicchio
  • 1.5 cups heavy whipping cream
  • 8 ounces Gorgonzola cheese
  • 0.125 teaspoon ground nutmeg
  • salt and ground black pepper to taste
Instructions:
  • 1. Boil a large pot of lightly salted water. 2. Add gnocchi and cook until they float to the top, 2 to 4 minutes. 3. Drain the gnocchi.
  • In a skillet, warm the olive oil over medium heat. Sauté the radicchio until softened, for about 5 minutes. Transfer the radicchio to a bowl and cover it with plastic wrap to allow it to further wilt.
  • In the same skillet, simmer heavy cream over medium heat for about 5 minutes. Whisk in Gorgonzola until melted and smooth, around 2 minutes. Season with nutmeg, salt, and black pepper, then stir in radicchio. Toss in gnocchi until well coated.
