Impress with a quick and creamy tagliatelle pasta dish featuring asparagus and gorgonzola sauce for your Italian dinner night! Ready in just 25 minutes.
Ingredients:
  • 1 lb asparagus
  • 8 oz uncooked tagliatelle pasta or fettuccine
  • 2 tablespoons olive or vegetable oil
  • 4 medium green onions, sliced (1/4 cup)
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, finely chopped
  • 1 cup crumbled Gorgonzola cheese (4 oz)
  • 1/2 teaspoon freshly cracked pepper
Instructions:
  • Snap off tough ends of asparagus. Cut into 1-inch pieces. Cook pasta according to package instructions, adding asparagus for the final 5 minutes of cooking.
  • In a 12-inch skillet over medium-high heat, heat oil. Sauté onions, parsley, and garlic for about 5 minutes, stirring occasionally, until onions are tender. Lower heat to medium.
  • Combine pasta, asparagus, and cheese in the skillet. Cook for approximately 3 minutes, gently tossing until the cheese is melted and the pasta is well coated. Sprinkle with pepper to finish.
