Easy peasy tomato tagliatelle

Delicious pasta with tomatoes, basil, asparagus, and Parmesan cheese. Buon appetito!
Ingredients:
  • 1 clove of garlic
  • ¼ of a bunch of fresh basil
  • 300g fresh tagliatelle
  • olive oil
  • 1 x 400 g tin of quality plum tomatoes
  • 125g asparagus spears
  • extra virgin olive oil
  • 10g Parmesan cheese
Instructions:
  • Peel and finely slice the garlic. Pick and finely chop the basil stalks. Cook the tagliatelle in boiling salted water for 8 to 10 minutes until al dente, then drain, saving some pasta water. Heat olive oil in a saucepan, fry the garlic until golden, about 1 to 2 minutes. Add basil stalks and tinned tomatoes, crush tomatoes with a spoon. Season, simmer for 5 minutes. Snap off and discard woody asparagus ends, finely chop spears. Add asparagus to sauce, simmer for 1 to 2 minutes. Remove from heat, season if needed, stir in basil leaves. Toss tagliatelle in sauce, adding water if needed. Serve with olive oil and Parmesan. Enjoy!
