Whip up a delicious and nutritious zucchini and rice slice for an effortless and healthy lunchbox option.
Ingredients:
  • 5 Brand free range eggs
  • 250g pkt microwave long grain white rice
  • 187.50 ml cheddar cheese, grated
  • 2 zucchini, trimmed, grated
  • 125.00 ml frozen peas
  • 3 spring onions, chopped
  • 250g punnet grape tomatoes, to serve
  • Apples, to serve
Instructions:
  • Preheat your oven to 190C (or 170C fan-forced) and prepare a 20cm square pan by greasing and lining it.
  • In a large bowl, gently beat the eggs. Add in rice, cheese, zucchini, peas, and spring onions. Stir well to blend all ingredients. Transfer mixture to the prepared pan, smoothing the top with a spatula. Bake for 30-35 minutes, or until the mixture is fully set.
  • Cut the slice into bite-sized pieces and neatly arrange in a lunchbox alongside grape tomatoes and fresh fruit.
