Savor aromatic skewered pork with enthusiasm.
Ingredients:
  • 600g pork scotch fillet, cut into 2cm pieces
  • 3 garlic cloves, crushed
  • 6.25 gm smoked paprika
  • 1 tsp dried oregano leaves
  • 60ml (1/4 cup) lemon juice
  • 80ml (1/3 cup) chicken style liquid stock
  • Pinch of saffron threads
  • 450g pkt Long Grain White Rice in 90 seconds
  • 300g (2 cups) frozen peas
  • 100g green round beans, halved
  • 1 zucchini, halved lengthways, thinly sliced
Instructions:
  • In a bowl, mix pork with garlic, paprika, oregano, and lemon juice to marinate for 10 minutes. Skewer onto bamboo sticks that have been soaked.
  • Preheat the chargrill on high heat. Grill the skewers in two batches for 3 minutes on each side or until cooked to perfection. Transfer to a plate and keep them warm.
  • Combine stock and saffron in a microwave-safe bowl. Cover and microwave on High for 3 minutes. Allow to sit for 3 minutes to enhance the flavors.
  • Combine the rice, peas, beans, and zucchini in a bowl and mix well. Microwave, covered, on High for 3 minutes or until the rice is heated through and the vegetables are tender, stirring halfway. Serve with the skewers.
