Pork skewers with caprese salad

Whip up these mouthwatering pork skewers using simple pantry items and fresh ingredients for a quick and delicious meal.
Ingredients:
  • 8 pork loin steaks, halved lengthwise
  • 140g (1/2 cup) Greek Style Yoghurt
  • 2 cloves garlic, crushed
  • 40.00 ml fresh basil, finely chopped
  • 20.00 ml flat-leaf parsley, finely chopped
  • 1 lemon, zested
  • Grilled pita bread (optional), to serve
  • 40.00 ml red wine vinegar
  • 10.00 gm caster sugar
  • 60ml (1/4 cup) olive oil
  • 4 vine-ripened tomatoes, cut into wedges
  • 1 large red onion, thinly sliced
  • 250.00 ml (firmly packed) basil leaves
  • 180g tub bocconcini, drained, torn
Instructions:
  • In a large bowl, combine pork, yogurt, garlic, basil, parsley, lemon zest, and oil. Season with salt and pepper, mix well, and let it marinate at room temperature for 15 minutes.
  • Skewer the pork lengthwise. Grease a chargrill pan or barbecue lightly and preheat on high. Grill skewers, turning occasionally, until cooked through, about 5 minutes. Transfer to a plate and let rest for 5 minutes before serving.
  • In a large bowl, combine vinegar, sugar, and oil, whisking until well blended. Add tomatoes, onion, basil, and bocconcini, gently toss together, and season to taste.
  • Divide skewers and salad onto plates, and serve with optional pita bread.
