Delight with pork skewers and spiced wheat salad for a flavorful and nutritious meal.
Ingredients:
  • 125ml (1/2 cup) fresh orange juice
  • 40.00 ml chopped fresh coriander
  • 2 tsp ground coriander
  • 14.40 gm honey
  • 500g pork loin steaks, cut into 2cm pieces
  • 160g (1 cup) Cracked Wheat
  • 200g green beans, topped, cut into 3cm lengths
  • 1 small red onion, halved, thinly sliced
  • 50g (1/3 cup) craisins (dried cranberries)
  • Olive oil spray
  • 40g (1/4 cup) chopped pistachio kernels
Instructions:
  • In a bowl, mix orange juice, fresh coriander, ground coriander, and honey. Place the pork in a glass or ceramic bowl and add half of the orange juice mixture. Coat the pork by tossing it. Cover and refrigerate for 30 minutes to marinate.
  • Place cracked wheat in a large heatproof bowl and cover with boiling water. Let it sit for 20 minutes until tender. Drain using a fine sieve and press out excess moisture with the back of a spoon. Transfer to a clean bowl.
  • Blanch the beans in boiling water for 2 minutes until vibrant and crisp-tender. Quickly cool them under cold running water, then drain. Combine the beans, onion, craisins, and the rest of the orange juice mixture with the cracked wheat. Mix well.
  • Skewer the pork and preheat a chargrill to medium-high. Lightly spray with olive oil and grill the skewers for 2-3 minutes per side until golden brown.
  • Plate the salad, lay the pork skewers on top, and garnish with pistachios before serving.
