Pork skewers - perfect for any occasion!
Ingredients:
  • 500g pork fillet, cubed
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1 tsp fennel seeds
  • 2.50 gm smoked paprika (see note)
  • 2 garlic cloves, crushed
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 dspn balsamic vinegar
  • 1 dspn olive oil
  • 250.00 ml thick yoghurt, to serve
  • 40.00 ml harissa, to serve (see notes)
  • Chopped fresh mint, to serve
Instructions:
  • Combine all ingredients, excluding the yogurt and harissa, in a glass bowl. Cover with plastic wrap and refrigerate overnight to allow flavors to marinate.
  • Preheat the barbecue or grill to high heat. Skewer the pork, discarding the marinade. Grill for 6-8 minutes, turning occasionally, until fully cooked.
  • Garnish with a dollop of yogurt, a drizzle of harissa, and a sprinkle of fresh mint.
