Create a quick and satisfying family meal using just a few basic ingredients.
Ingredients:
  • 350g penne rigate
  • 100g snow peas, trimmed, halved diagonally lengthways
  • 500g single chicken breast fillets
  • 4.60 gm olive oil
  • 1 x 500g bottle Summer Tomato Basil Pasta Sauce
Instructions:
  • Boil pasta in generously salted water as per package instructions until al dente. Toss in snow peas during the final 30 seconds. Drain pasta and peas, then place back into the pot.
  • Preheat a large frying pan over medium heat while brushing the chicken with oil and seasoning it with salt and pepper. Cook the chicken for 4 minutes on each side until fully cooked. Transfer to a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Pour the sauce into the pasta, then heat on medium while stirring until warm. Cut the chicken into thick diagonal slices and mix into the pasta before tossing everything together.
  • Serve the dish in individual bowls.
