Create a delicious family pasta with just a handful of ingredients.
Ingredients:
  • 400g dried farfalle pasta
  • 1 barbecued chicken
  • 190g jar sun-dried tomato pesto
  • 70g packet baby rocket leaves
  • 100g parmesan, shaved, to serve
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until al dente.
  • Remove the chicken from bones, discarding the skin and bones, and shred the chicken flesh.
  • After draining the pasta, reserve 2 tablespoons of cooking water. Combine the pasta and reserved water back in the saucepan, then mix in the pesto until everything is well coated.
  • Combine chicken, rocket, and a pinch of salt and pepper in a pan. Gently toss over low heat until rocket begins to wilt. Divide the pasta among serving bowls, then sprinkle generously with Parmesan cheese. Serve hot and enjoy!
