Creamy Tomato-Chicken Pasta

Creamy tomato and chicken pasta with spinach and basil. Perfect weeknight meal.
Ingredients:
  • 1 pound Chicken, broilers or fryers, thigh, meat only, raw
  • 1 pinch chili powder, or to taste
  • 1 tablespoon olive oil, or as needed
  • 5 cloves garlic, minced
  • 1 (16 ounce) can tomato sauce
  • 1 cup heavy cream
  • 1 (8 ounce) package fresh spinach
  • 1 tablespoon chopped fresh basil, or to taste
  • 1 (16 ounce) package penne pasta
Instructions:
  • Dry off the chicken and season generously with chili powder, salt, and pepper.
  • In a hot pan with oil, brown the chicken for about 3 minutes on each side. Transfer to a clean plate.
  • Add garlic to the flavorsome pan drippings and sauté over medium heat until fragrant, about 30 seconds to 1 minute. Mix in tomato sauce and heavy cream, then reduce heat to low. Incorporate spinach and basil, cooking and stirring until spinach wilts. Finally, add chicken to the sauce and cook until no longer pink in the center.
  • Cook the chicken mixture while you bring a large pot of lightly salted water to a boil. Add penne and cook until al dente, about 11 minutes. Drain pasta.
  • Top the pasta with the flavorful chicken mixture before serving.
