"Bake gnocchi in tomato sauce until cheese is golden and bubbly."
Ingredients:
  • 800g can chopped tomatoes
  • 2 garlic cloves, finely chopped
  • Pinch of dried chilli flakes
  • 62.50 ml shredded basil leaves
  • 625g packet potato gnocchi
  • 35g mozzarella
  • Green salad, to serve (optional)
Instructions:
  • Fire up the grill to medium-high heat.
  • In a large heavy-based saucepan over medium-high heat, combine tomatoes, garlic, chilli flakes, and basil. Bring to a boil, then lower the heat to medium-low and simmer for 15 minutes until the sauce thickens, stirring occasionally. Season with salt and pepper to taste.
  • Cook the gnocchi according to the packet instructions. Drain the gnocchi well and then add it to the pan of tomato sauce, stirring well to combine.
  • Transfer the gnocchi into four 2 cup (500ml) baking dishes and sprinkle with the mozzarella. Broil for 2-3 minutes until bubbly and golden. Enjoy with a side of green salad, if preferred.
