Quick and nutritious meal perfect for busy evenings.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 600g tomato
  • 1/2 tsp dried chilli flakes
  • 82.50 ml shredded fresh basil leaves
  • 1 bunch English spinach, trimmed, roughly shredded
  • 2 x 500g packets potato gnocchi
  • 125g ricotta
Instructions:
  • 1. Heat oil in a large frying pan over medium-high heat. Saute onion for 4 minutes until softened. Stir in garlic. Add tomato and chilli. Simmer on low heat for 5 minutes until thickened. Fold in basil and spinach, cook for 1 to 2 minutes until just wilted.
  • Cook the gnocchi in a large saucepan of boiling salted water according to the package instructions until tender. Drain the cooked gnocchi.
  • Combine gnocchi with the flavorful tomato mixture, ensuring all the ingredients are well combined. Season with a sprinkle of salt and pepper for a perfect balance of flavors. Top it off with a generous dollop of creamy ricotta cheese before serving.
