Ingredients:
  • 9.20 gm olive oil
  • 1 400g can diced tomatoes
  • 1 small fresh red chilli, finely chopped
  • 62.50 ml chopped fresh continental parsley
  • Salt & ground black pepper, to taste
  • 1 625g pkt gnocchi
  • 40g (1/2 cup) finely grated parmesan
  • Crusty Italian bread, sliced, to serve
Instructions:
  • In a large frying pan, heat oil over medium heat. Add onion and garlic, and stir often for 2 minutes until onion softens slightly.
  • Combine the tomatoes and chili in the pot, then turn up the heat to high to bring it to a boil. Lower the heat to medium and let it simmer, uncovered, for 2 minutes until the sauce thickens slightly. Add the parsley, season with salt and pepper, cover to keep warm, and set aside.
  • Boil the gnocchi in salted water until they float. Drain, keeping 2 tablespoons of liquid. Add gnocchi and reserved liquid to the sauce, toss, and serve topped with Parmesan. Enjoy with crusty bread.
