Baked curry chicken with gnocchi, broccoli, onions, peanuts, and cilantro - a delicious and simple dish!
Ingredients:
  • 1 (16 ounce) package potato gnocchi
  • 4 (5 ounce) skinless, boneless chicken breast halves
  • 5 tablespoons peanut butter
  • 5 tablespoons Thai green curry paste
  • 4 tablespoons honey
  • 5 tablespoons olive oil, divided
  • 0.5 teaspoon salt
  • 2 large heads broccoli, cut into florets
  • 2 small red onions, cut into wedges
  • 0.25 cup chopped fresh cilantro
  • 3 tablespoons salted peanuts, roughly chopped
  • 1 lime, juiced
Instructions:
  • Bring a large pot of salted water to a boil, then cook gnocchi until they float, for 2 to 4 minutes. Drain and set aside.
  • Preheat the oven to 400 degrees F (200 degrees C) while you prepare the rest of the recipe.
  • Place the chicken in a spacious bowl. Add in peanut butter, curry paste, honey, 3 tablespoons of olive oil, and salt. Mix thoroughly using your hands.
  • In a separate bowl, toss together broccoli, red onion, and the remaining olive oil until well coated. Place the chicken in a roasting dish, then add the broccoli mixture and the cooked gnocchi.
  • Roast the chicken in the preheated oven for about 30 minutes, ensuring it is no longer pink in the center and the juices run clear. Stir halfway through. Use an instant-read thermometer to check for a minimum temperature of 165°F (74°C). Garnish with cilantro, peanuts, and lime juice before serving.
