Whip up a delicious 15-minute gnocchi dish with baby broccoli, leek, bocconcini, and a touch of chili for a quick and tasty meal.
Ingredients:
  • 500g pkt gnocchi
  • 1 leek, pale section only, thinly sliced
  • 1 garlic clove, crushed
  • 2 bunches baby broccoli, chopped
  • 2 long red chillies, thinly sliced
  • 100g cherry bocconcini
Instructions:
  • Boil the gnocchi in a large saucepan according to the package instructions. Make sure to drain thoroughly.
  • In a large frying pan over medium heat, warm 2 tablespoons of oil. Sauté leek and garlic for 5 minutes until leek softens, then add baby broccoli stems and cook for an additional 2 minutes until tender.
  • Place the gnocchi, baby broccoli tops, and chili in a pan. Cook while stirring for 2 minutes, or until the gnocchi is heated through and the baby broccoli is tender. Add the bocconcini, season to taste, and drizzle with the remaining oil.
