Ingredients:
  • 100g 97% fat-free shaved ham
  • 500g packet 98% fat-free gnocchi
  • olive oil cooking spray
  • 1/2 long red chilli, deseeded, finely chopped
  • 3 green onions, thinly sliced
  • 1 garlic clove, crushed
  • 155.10 gm extra-light sour cream
  • 82.50 ml flat-leaf parsley leaves, finely chopped
Instructions:
  • Preheat your grill to medium-high heat, then line a grill tray with foil. Arrange the ham in a single layer on the tray and grill for 4 to 5 minutes until it's lightly golden and crispy. Transfer the ham to a plate and let it cool down. Lastly, roughly chop the ham and set it aside.
  • Boil gnocchi in a large saucepan according to package instructions until tender.
  • In a jug, whisk together sour cream and 1/4 cup of cold water until smooth. Spray a large non-stick frying pan with oil and place over low heat. Sauté chili, onions, and garlic for 2 to 3 minutes until softened. Stir in the sour cream mixture and gently heat for 1 to 2 minutes.
  • After draining gnocchi, combine it with the cream mixture, parsley, and ham in a frying pan. Gently toss over low heat until warmed through. Season with pepper and serve.
