Festive greens gnocchi

Homemade gnocchi with vibrant green sauce – a cozy post-holiday activity. Soft, light pillows with a fresh twist. Kid-friendly way to sneak in green veggies. Top with crispy breadcrumbs and mild cheese for little ones.
Ingredients:
  • 800 g Maris Piper potatoes
  • 80 g plain flour plus extra for dusting
  • 1 free-range egg
  • 6 cloves of garlic
  • 400 g cavolo nero
  • 50 g Parmesan cheese
  • extra virgin olive oil
  • 50 g shelled unsalted walnut halves
  • 100 g Gorgonzola cheese
Instructions:
  • 1. Begin by washing the potatoes, chopping them into 5cm chunks, and boiling them in salted water for 15 minutes until tender. Drain and steam dry for 2 minutes. Mash with a potato ricer, sieve, or masher. Mix in the flour and let the potatoes cool. Season with salt and pepper. 2. Knead the mixture on a floured surface, then divide into 4 equal pieces. Roll each into a 2cm thick sausage, cut into 3cm lengths, and create grooves with a fork or grater. Alternatively, roll into balls. 3. Boil water in a pan, add whole garlic cloves and cavolo nero leaves for 4 minutes. Blend the cavolo nero, garlic, Parmesan, and olive oil in a food processor. 4. Cook the gnocchi in boiling water for 3 minutes or until they float. Toss them in the sauce on a platter, sprinkle with Parmesan, and add walnuts and Gorgonzola. Serve and enjoy!
