Festive and luxurious modern Christmas day side dish.
Ingredients:
  • 2 bunches broccolini, trimmed
  • 3 bunches asparagus, trimmed
  • 150g green beans, trimmed
  • 150g snow peas, trimmed
  • fresh mint leaves, to serve
  • 11.80 gm dijon mustard
  • 42.00 gm lemon juice
  • 36.40 gm olive oil
  • 30.00 ml chopped fresh tarragon leaves
Instructions:
  • Prepare the dressing by whisking together mustard, lemon juice, and oil in a bowl. Season with salt and pepper, then gently stir in the fragrant tarragon.
  • 1. In a large saucepan, bring water to a boil. 2. Add broccolini, asparagus, and beans, cooking for 2 to 3 minutes until almost tender. 3. Then, add snow peas and cook for an additional minute until all vegetables are tender. 4. Drain the vegetables and enjoy!
  • Place the vegetables elegantly on a platter. Drizzle with the delicious dressing and sprinkle with fragrant mint. Serve gracefully.
