Whip up a delicious dinner in 17 minutes with quick and easy steamed salmon and green beans.
Ingredients:
  • 4 x 180g skinless salmon fillets
  • 2 x 175g packets baby green beans, topped, blanched in boiling water for 1 minute
  • 27.30 gm olive oil
  • 40.00 ml white wine vinegar
  • 20.00 ml roughly chopped tarragon leaves
  • 11.80 gm Dijon mustard
Instructions:
  • Prepare the bamboo steamer with baking paper and position it over a wok half-filled with simmering water. Arrange the fish in a single layer inside the steamer and cover it. Steam for 5 minutes for rare, or until done to your preference.
  • Toss beans with 2 teaspoons of olive oil and season to taste, then whisk together vinegar, tarragon, mustard, 2 teaspoons warm water, and the rest of the olive oil until well combined. Serve the salmon on top of the beans, drizzled with the vinaigrette.
