Steamed Salmon with Broccoli and Shallots

Delicious steamed salmon with broccoli, perfect over brown rice or quinoa.
Ingredients:
  • 1 tablespoon olive oil
  • 1 shallot, thinly sliced
  • 2 (8 ounce) salmon fillets
  • salt and ground black pepper to taste
  • 2 cups fresh broccoli
  • 1 lemon, cut in half
Instructions:
  • In a large skillet over medium heat, warm up the olive oil. Add the shallot and garlic, and sauté until they are soft and fragrant, around 3 minutes.
  • Season both sides of the salmon fillets with salt and pepper. Place fillets skin-side up in a skillet and cook for 4 minutes. Flip the salmon so the skin side is down, then top with shallot and garlic. Surround the fillets with broccoli, stir to coat in oil. Squeeze fresh lemon juice over salmon and broccoli.
  • Steam the covered skillet until the salmon is fully cooked and flakes easily with a fork, approximately 5 minutes.
