Quick and simple steamed salmon with zesty lemon, olive, and caper dressing, finished with fresh dill.
Ingredients:
  • 2 (6 ounce) fillets salmon
  • salt and ground black pepper to taste
  • 1 lemon, juiced, divided
  • 7 pitted green olives, sliced
  • 3 tablespoons olive oil, or more to taste
  • 1 tablespoon capers
  • 1 teaspoon chopped fresh dill, or to taste
Instructions:
  • Heat up a large saucepan with 1 to 2 inches of water until it boils. Season salmon with salt, pepper, and half of the lemon juice. Put the salmon in a steamer basket, then place the basket in the saucepan. Cover and steam for 7 to 8 minutes until the salmon flakes easily with a fork.
  • As the salmon cooks, combine olives, olive oil, capers, and the rest of the lemon juice in a bowl. Season with salt.
  • Plate the salmon, drizzle with dressing, and garnish with dill.
