Ingredients:
  • 1 bay leaf
  • 2 tablespoons unbleached all-purpose flour
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper, or to taste
  • 1/2 teaspoon kosher salt, to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon pure olive oil
  • 8 (3 pounds) bone-in chicken thighs, skin removed
  • 2 large sweet onions, chopped
  • 3 garlic cloves, minced
  • 3/4 cup homemade chicken stock or reduced-fat, low-sodium chicken broth, plus more if needed
  • 2 sprigs fresh thyme
  • 1 green onion, thinly sliced, for garnish
Instructions:
  • Preheat the oven to 350°F for the perfect starting temperature.
  • Prepare the seasoned flour: Combine flour, onion powder, paprika, cayenne pepper, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a large shallow dish. Mix well.
  • In a large ovenproof skillet over medium-high heat, heat the oil until it shimmers for cooking the seasoned chicken.
  • Prepare and sear the chicken: Dry the chicken thighs with a paper towel. Coat them in the flour-spice mixture on both sides, shaking off any excess. Sear the thighs in batches in a hot pan until golden brown, around 1 to 2 minutes per side. Place the seared chicken on a plate.
  • Sauté the onions in the skillet over medium heat until golden brown, about 5 to 7 minutes. Add the garlic and cook until fragrant, about 45 to 60 seconds.
  • Create a flavorful gravy: Incorporate the remaining flour-spice mixture into the onions, ensuring everything is coated. Pour in the chicken stock, stir well, and bring to a boil on medium-high heat. Reduce the heat to low and simmer gently.
  • Combine chicken, thyme sprigs, and bay leaf in the skillet with the onions and gravy, ensuring thighs are coated on all sides.
  • Bake in the oven uncovered until chicken is fully cooked, 20 to 25 minutes, or until it reaches an internal temperature of 165°F and juices run clear. Adjust gravy consistency by adding chicken stock gradually while stirring until it coats a spoon.
  • Taste and season to perfection with a sprinkle of salt and pepper, then serve promptly.
